Chicken Kondattam is a fiery, crunchy, and intensely flavorful deep-fried delicacy that is a true superstar of the Malabar snack and side-dish scene. Inspired by the traditional sun-dried curd chilies (Kondattam Mulaku), this dish features bite-sized pieces of chicken marinated in a pungent paste of ginger-garlic, Kashmiri chili powder, and turmeric, which are then fried to a golden, “kuru-kuru” crispness. The magic happens in the final toss, where the fried chicken is coated in a sticky, spicy-sweet glaze of sautéed shallots, tomato ketchup, and a heavy handful of crushed dried red chilies and curry leaves.
